Choosing / Matcha Matsu guide

Matcha for whisking, lattes or cooking

Your preparation method should guide the powder you buy.

Tea bowl, powder and bamboo whisk

A powder you love in a plain bowl may disappear in milk; a powder that works beautifully in baking may taste too forceful on its own. That is why choosing by use is more helpful than choosing by a prestige label.

For a plain whisked bowl

You taste the matcha with little to hide behind. Look for a seller who describes flavour, origin and freshness clearly. Start with a small amount if the product is unfamiliar. Make a measured bowl using our basic method, then decide whether you enjoy its balance.

For a latte

Milk softens bitterness and can cover subtle flavours. A matcha with a clear presence in milk may be more useful than paying extra for delicate notes you cannot detect in your finished drink. Try the simple latte with a consistent ratio before judging a powder.

For cooking

In cakes or other recipes, matcha contributes colour and flavour alongside many other ingredients. Choose a powder sold for culinary use by a credible seller, and check the recipe’s quantity before buying a large bag. The finished food depends as much on the recipe as the tea.

These are practical categories, not fixed grades. Ask what the seller means by its labels, check the first-purchase checklist, and keep notes about what you actually like.
